Apricot Orange Pecan Bread

Instead of adding cranberries to our Cranberry Bread Mix, try adding Dried Apriots & Pecans for a great tasting bread.

Serves: 12

1 package Concord Foods Cranberry Bread Mix
½ cup finely chopped dried apricots
½ cup coarsely chopped pecans
1 large egg, lightly beaten
2/3 cup water

  1. Preheat oven to 350ºF.
  2. Grease and lightly flour an 8" x 4" loaf pan.
  3. Add chopped apricots to the dry bread mix and stir until the apricots are separated and evenly distributed. Add water and egg to mix and stir with a spoon until the ingredients are moistened. Fold the nuts into batter. Pour batter into prepared pan.
  4. Bake at 350ºF for 50 minutes or until toothpick inserted into center comes out clean. Cool 20 minutes. Loosen edges and remove from pan.

Note:When using a disposable foil loaf pan, grease and flour bottom only. If using a 9" x 5" loaf pan, adjust the baking time to 45 minutes.
