Asparagus with Lemon Ginger Dressing

Serves: 6-8


2 lbs Asparagus
1 tablespoon ginger, grated
1/3 cup Concord Foods Lemon Juice
2/3 cup vegetable oil
1 tablespoon sesame oil
1 teaspoon white pepper
1 teaspoon salt 


Snap off tough ends of asparagus and rinse. Steam until tender, 5-10 minutes or until desired doneness.

Prepare dressing by combining ginger and lemon juice in small bowl. Slowly add oil in thin stream whisking constantly. Whisk in sesame oil, salt and pepper. Place asparagus on platter and drizzle on dressing while asparagus is still warm. Serve at room temperature.
