Baja Lime Shrimp Tacos with Mango Salsa

1 lb. bag of raw jumbo shrimp, thawed, peeled and deveined

¼ cup vegetable oil

3 Tablespoons Concord Foods Reconstituted Lime Juice

2 Tablespoons Cajun seasoning

1 Tablespoon honey

1 ripe mango, peeled and diced

1 ripe avocado, peeled and diced

¼ cup red bell pepper, diced

¼ cup red onion, diced

1/8 cup fresh cilantro, chopped

Medium tortillas


1)   In a medium bowl, mix together oil, 2 Tbsp. Lime Juice, Cajun seasoning and honey. Coat shrimp with mixture and refrigerate for 30 minutes.

2)   Preheat grill to medium setting, around 350°F.

3)   In a small bowl, toss together mango, avocado, red onion, red bell pepper, cilantro and remaining 1 Tbsp. of Lime Juice. Set aside

4)   Grill shrimp on foil over medium heat, turning once. Grill 3 minutes per side.

5)   Place a few grilled shrimp on a warm tortilla and top with mango mixture.
