Bakery Ingredients

Our specialty bakery line consists of caramels, fruit spreads, chocolates and marshmallows formulated precisely for bakery applications. We specialize in caramel fillings and toppings. Our range includes bake and post-bake stable, freeze-thaw stable, organic and sugar free formulas. Each caramel has been attentively designed to meet the challenging needs of our bakery customers by maintaining great taste, texture and appearance throughout the baking process.

Similar to our caramels, our complete line of quality bake and post-bake stable fruit spreads are suitable for topical and filling applications. Our fruit spreads offer a high percentage of fruit and are free of high fructose corn syrup. Our other products, including chocolate and marshmallows for topping or filling, maintain their appearance and viscosity regardless of high baking temperatures. We also offer a soft chocolate ganache for bakery applications.

All products maintain structure and form because we carefully control the ratio of fat, proteins, stabilizers, solids, moisture level and water activity. Each formulation is specifically balanced to ensure that fillings and toppings retain form and consistency for all applications. Every product, including conventional, sugar free and organic, can be deposited, injected, drizzled or latticed.

We also understand consumer demand. For example, to address the concerns of the health conscious and diet restricted, we continue to reformulate fat systems across product lines to reduce or eliminate trans fats and hydrogenated oils. Additionally, a switch from high fructose corn syrups to natural sucrose is occuring throughout our lines. We also have organic caramels (certified by QAI) to meet the growing demand for natural and organic products.

Our line of standard products is notable, but we are always ready to respond to custom requests. We have a highly focused technical team who collaborate with a seasoned sales group to clarify specifications for each customer.
