Banana Raspberry Muffins

These banana raspberry muffins are great for breakfast or any time of the day!

Serves: 12

1 package ChiquitaTM Banana Bread Mix
1 cup mashed bananas (approximately 2 very ripe bananas)
1 large egg (lightly beaten)
1/3 cup water
1/4 teaspoon cinnamon
2/3 cup raspberries
1/4 cup chopped walnuts (optional)
Coarse/sanding sugar (optional)

Directions:

  1. Pre-heat oven to 400*F.
  2. Place 12 paper baking cups in muffin tin.
  3. In a large bowl, combine cinnamon with mix. Continue preparing the banana bread according to package directions (step 2). After batter is mixed, carefully fold in raspberries and nuts.
  4. Spoon batter into muffin cups.* Sprinkle sugar over tops.
  5. Bake at 400*F for 15 to 18 minutes or until toothpick inserted into center comes out clean. Remove muffins from tin immediately and cool on a wire rack.

*Using an ice cream scoop makes filling the cups easy and quick.
