Banana Raspberry Muffins
These banana raspberry muffins are great for breakfast or any time of the day!
Serves: 12
1 package ChiquitaTM Banana Bread Mix
1 cup mashed bananas (approximately 2 very ripe bananas)
1 large egg (lightly beaten)
1/3 cup water
1/4 teaspoon cinnamon
2/3 cup raspberries
1/4 cup chopped walnuts (optional)
Coarse/sanding sugar (optional)
Directions:
- Pre-heat oven to 400*F.
- Place 12 paper baking cups in muffin tin.
- In a large bowl, combine cinnamon with mix. Continue preparing the banana bread according to package directions (step 2). After batter is mixed, carefully fold in raspberries and nuts.
- Spoon batter into muffin cups.* Sprinkle sugar over tops.
- Bake at 400*F for 15 to 18 minutes or until toothpick inserted into center comes out clean. Remove muffins from tin immediately and cool on a wire rack.
*Using an ice cream scoop makes filling the cups easy and quick.
