Chicken Rice Soup

Serves: 4


2 cans (14.oz each) chicken broth
1/2 cup cooked white rice
3 eggs, beaten
3 tablespoons Concord Foods Reconstituted Lemon Juice
1 cup finely chopped cooked chicken


Heat chicken broth and rice in a medium (2qt) saucepan until hot. Combine beaten eggs and lemon juice. Gradually stir in a small quantity of the heated soup to the egg/juice mixture. Stirring constantly, slowly pour this mix into the rest of the soup. Continue heating (do not boil) and stirring until the soup is thickened. Add chicken and cook for an additional minute.
