Cool Summer Pizza

Serves: 4-6

Cool Summer Pizza


1 large tomato, seeded and finely diced
1/4 cup chopped cilantro
1/4 cup finely chopped white onion
1 tablespoon finely chopped jalapeno chiles
2 tablespoons freshly squeezed lime juice
2 ripe avocados
1 package Concord Foods Guacamole Mix
1 thin 12-inch gluten-free pizza crust
2 teaspoons extra virgin olive oil
1/2 teaspoon garlic powder
1 cup shredded Monterey Jack Cheese


  1. In a medium bowl, combine tomato, cilantro, onion, chiles and lime juice. Toss to mix. Cover, refrigerate and allow the flavors to blend for at least 30 minutes.
  2. In a separate bowl, mix mashed avocado pulp and Concord Foods Guacamole Mix. Cover, refrigerate and allow flavors to blend at least 30 minutes.
  3. Brush pizza crust with olive oil. Sprinkle with garlic powder. Bake following package directions. Remove from oven and cool completely.
  4. When ready to serve, spread guacamole over baked and cooled crust. Top with tomato mixture and sprinkle with Monterey Jack Cheese. Slice and serve.
