Creamy Southwest Rice

2 cups sour cream
2 cups shredded Monterey Jack cheese
1 packet Concord Foods Salsa Seasoning Mix
1 packet Concord Foods Guacamole Mix
1 (15 oz.) can black beans, drained
3 cups cooked rice
1 cup shredded cheddar cheese 


  1. Preheat oven to 350 degrees.
  2. In a large bowl, stir sour cream, Jack cheese, and Concord Foods packets. Fold in beans and rice.
  3. Turn into a greased 9x13-inch baking dish and bake for 15 minutes. Sprinkle with cheddar and bake for another 10 minutes.
