Eggs Florentine

A classic Eggs Florentine used spinach instead of ham.  

Serves: 4


  • 2 English muffins; split and toasted  
  • 2 large handfuls of fresh baby spinach                                                            
  • 4 eggs, poached
  • Paprika and black pepper for garnish (optional)
For Hollandaise:


  1. Prepare Concord Foods Hollandaise Sauce according to directions on package.
  2. To assemble, top each English Muffin half with baby spinach and poached egg.  Drizzle the hollandaise sauce over top. Garnish with paprika and black pepper, if desired. Serve immediately.
