Fruit & Nut Stuffing

A wonderful stuffing for Thanksgiving dinner!

Serves: 12

1 loaf prepared ChiquitaTM Banana Bread, cut into cubes
½ cup butter
2 large onions, chopped
2 cup fresh cranberries, chopped
½ cup walnuts, chopped
½ teaspoon nutmeg, ground
½ teaspoon cinnamon, ground
¼ teaspoon black pepper, ground
½ teaspoon garlic, granulated
¼ teaspoon thyme, ground
¼ teaspoon cayenne pepper    
1 teaspoon salt
1 can (11 oz) mandarin oranges, drained, cut in half


  1. In large skillet, melt butter and sauté onions until golden brown.
  2. In a small bowl, measure spices and mix together.
  3. Add, bread, cranberries, walnuts and spices to skillet and mix well. Toss mandarin oranges into bread mixture
  4. Bake in a greased casserole dish for 35 minutes or until desired doneness is achieved.
