Greek Salad

Serves: 4


6 tablespoons Greek Yogurt
2 tablespoons Concord Foods Reconstituted Lemon Juice
2 tablespoons extra virgin olive oil
2 garlic cloves, finely chopped
½ bag Hearts of Romaine or Mixed Greens
3 tomatoes, cut into wedges
½ cucumber, peeled, sliced and halved
15 pitted ripe olives
¾ cup crumbled feta cheese


  1. Combine yogurt, lemon juice, olive oil and garlic in a small bowl. Whisk until well blended.
  2. On a shallow, medium-size platter, arrange salad greens.  Top with tomatoes and cucumbers.  Drizzle dressing over the salad.  Garnish with olives and feta cheese.
