Grilled Salmon Steaks with Vodka, Orange and Lemon Juice

Serves: 4-6

2 Salmon fillets (1 1/2 to 2 pounds)
1/2 cup Vodka
1/4 cup Orange Juice
3 tablespoons Concord Foods Reconstituted Lemon Juice
2 tablespoons mustard, coarse grained
1/4 cup fresh dill, chopped

Place fillets in a re-sealable plastic bag. Mix together remaining ingredients in bowl and pour over fish, making sure all sides are coated. Marinate at least 40 minutes and up to one hour. Drain fish from marinade and boil marinade for serving with cooked fish. Grill fillets (in hinged basket) over high heat for 3-5 minutes.

Fish may also be cooked under a broiler or with an indoor grill.

Serve immediately.
