Grilled Swordfish in Lemon-Ginger Sauce
Serves: 4-6
2 pounds Swordfish steaks (or any other firm-fleshed fish)
1/3 cup Concord Foods Reconstituted Lemon Juice
1/4 cup Dry White wine
3 tablespoons Extra Virgin Olive Oil
2 tablespoons light soy sauce
1/4 teaspoon black pepper
1/4 cup green onion (scallions), chopped
1 tablespoon fresh ginger, minced
2 cloves garlic, minced
- Combine marinade ingredients in re-sealable 1 gallon plastic bag. Add fish and let marinate at least 2 hours.
- Remove fish from marinade. Pour marinade into small saucepan and bring to boil. Remove fish from heat and divide into two portions.
- Grill the fish, brushing one portion of the cooked marinade onto the fish as it cooks. Pour the remaining boiled marinade portion over the cooked fish.
Note:Fish may also be cooked under a broiler or with an indoor grill.
