Serves: 4

1 lb ground turkey
1 package Concord Foods Salsa Seasoning Mix, Hot
2 plum tomatoes, chopped
1/4 cup diced red onion
4 slices jalapeno havarti cheese (or pepper jack)
4 pineapple rings
2 small ripe avocados
1 package Concord Foods Guacamole Mix, Mild
2 tbsp chopped fresh cilantro
4 wheat kaiser rolls, sliced in half

  1. Preheat grill on medium. Brush with a little olive oil.
  2. In a large bowl, combine ground turkey, Salsa Seasoning Mix, tomato and red onion. Mix well.
  3. Form into 4 burger patties. Grill patties until fully cooked through, about 25 minutes. Top each patty with a slice of cheese and let melt. Remove burgers from grill.
  4. Place pineapple rings onto grill and let cook until browned or grill marks appear, about 2 minutes per side.
  5. Cut and pit avocados. Using a spoon, scoop out the insides and place in a bowl. Add Guacamole Mix and cilantro and stir until avocado is mashed and blended well.
  6. Toast rolls in oven at 350 degrees for about 5 minutes.
  7. To assemble burgers, place a burger patty on bottoms of rolls. Add a grilled pineapple ring and a dollop of guacamole. Cover with tops of rolls.

Note: A tabletop electric contact grill was used. Adjust cooking times and temperatures for other types of grills.
