Lemon Glazed Poppy Seed Loaf
Quick & Easy Homemade Bread
Serves: 12
1 package (15.6 oz) Poppy Seed Quick Bread
3 tablespoons Concord Foods Reconstituted Lemon Juice, divided
1 container (6 oz) low fat vanilla yogurt
2 large eggs
¼ cup vegetable oil
1 cup sifted confectioners’ sugar
2 teaspoons melted butter
couple of drops (1/16 teaspoon) vanilla extract
- Preheat oven to 350ºF.
- Grease and flour a 9” x 5” disposable foil loaf pan. Set aside.
- Add 2 tablespoons lemon juice to the yogurt. Place bread mix, “lemon yogurt”, eggs and vegetable oil in a large mixing bowl. Beat with an electric mixer on low speed until entire mix is wet (about 20 seconds). Increase speed to medium and continue mixing for an additional minute.
- Pour batter into loaf pan. Bake for 42 to 45 minutes, until a toothpick inserted in center comes out clean. Cool for 10 minutes in pan. Continue cooling on a rack for an additional 15 minutes. Prepare glaze while loaf is cooling.
- Mix confectioners’ sugar, 1 tablespoon lemon juice, 2 teaspoons melted butter and 1/16 teaspoon vanilla extract in a small bowl with an electric mixer for one minute. While loaf is still warm, spoon glaze over the top and let drizzle down the sides. Slice and serve.
Note:When using a disposable foil loaf pan, grease and flour bottom only. If using a 9" x 5" loaf pan, adjust the baking time to 45 minutes.
