Pumpkin Spice Glazed Squash and Sweet Potato Bites

Ingredients:


Directions:
  1. Preheat oven to 400ºF.
  2. Cut squash and sweet potato into ½ inch cubes and toss with olive oil until evenly coated.
  3. Lay squash and sweet potato cubes in a single layer on a large baking sheet and roast until tender (about 20-25 minutes), turning them over once after 10 minutes.
  4. Remove from oven and mix in the pumpkin spice caramel dip.
  5. Roast for additional 5 minutes. Remove baking sheets from oven.
  6. Place mini fillo shells on a baking sheet and bake @ 400°F for 2 minutes. Allow shells to cool before filling.
  7. Fill each mini fillo shell with 5-6 pieces of roasted squash and sweet potato cubes.  Garnish with whipped topping and fresh mint leaf.

 Makes roughly 45 mini appetizers
