Sweet Steamed Kale

Ingredients:
1/3 cup Concord Foods Pumpkin Spice Caramel Dip
1 small onion (or ½ Vidalia onion), diced
2 cloves minced garlic
1 Tbsp Dijon mustard
1 Tbsp cider vinegar
1 ½ cups chicken broth
4 cups (about ½ lb.) stemmed chopped kale
¼ cup dried cranberries
¼ cup sliced almonds
 
Directions:

  1. Heat Pumpkin Spice Caramel Dip in a large pot over low/medium heat until smooth.
  2. Add onion and garlic to the pot, stirring regularly to keep Dip from burning.  Cook until onions are translucent, roughly 5 minutes or until it begins simmering.
  3. Stir in mustard, vinegar, and chicken broth and increase heat to high.  Bring to a boil
  4. Stir in the kale, cover the pot, and cook for five minutes (or until wilted)
  5. Reduce to medium/low heat and stir in cranberries.  Leave the pot uncovered and let simmer until the liquid is reduced by half, about 7 minutes.
  6. Lightly strain any excess sauce and garnish with almonds before serving.
