Watermelon Cucumber Salsa

This refreshing summer, salsa won an honorable mention in the Summer Recipe Contest! Perfect for summer gatherings!

INGREDIENTS 

2 cups small-diced seedless watermelon

1 seedless cucumber, peeled and diced

½ cup small-diced red onion

2 jalapeno peppers, seeded and minced

¼ teaspoon kosher salt

3 Tablespoons Concord Foods Reconstituted Lime Juice

¼ cup chopped, fresh cilantro

¼ cup finely crumbled cotija or feta cheese

Pita or tortilla chips for serving.

DIRECTIONS

1)   Combine watermelon, cucumber, onion, jalapeno pepper and salt in a bowl. Set aside at room temperature for 30 minutes.

2)   Pour off accumulated liquid.  Gently stir in lime juice, cilantro and cheese.

3)   Chill and serve with chips.
